Last time I checked we were at 800 or so members, with very few alts. You already hit on the main way to win battles, overwhelming numbers that cost next to nothing to field. Additionally people vastly underestimate t1 frigates. A group of 10 t1 frigates properly outfitted and piloted by competent pilots will reliably take down a battleship with no losses. I'm mostly familiar with caldari so I'll talk about that for the most part.
First off I'd suggest producing mostly Griffins and Merlins for caldari. The Merlin has 4 midslots and is faster and more survivable then the Kestrel, allowing it to work well as a tackler. The Griffins use is obvious, Electronic Warfare.
For the Merlins put an AB or MWD (If they have the skills) and 3x 20km scrams in the mids, and fill the nanos with lows. Fill the highs with as many guns and launchers as they have the skills to fit, but make sure they've got the range to keep out of smart bomb radius.
For the Griffins fit 2x Standard Launchers with Bloodclaws, 1x AB, 1x multispec, and 2x racial jammers (balance the racials among all the griffins), and a cap relay in the low. Griffins really don't have the energy to run more then one mulitspec, so having several griffins to cover all sensor types is key. With minimal engineering skills they should be able to keep jamming indefinitely. Remember to get them to set them on manual operation!
For Amarr I'd suggest producing some Executioners in additon to Punishers. My guess is most of your newbies haven't trained up MWD skills, so you need some AB'd executioners to try and get a tacker with a somewhat decent speed. 1x AB, a 7500m scrambler, and 2 nanos (guns as they can fit them) will help you catch a number of people who'd typically warp off before the big fat merlins get there.
Once your newbies start geting into cruisers, Blackbirds are invalueable. A standard cookie cutter Blackbird with 6x multispecs, caprelay, 1600mm plate and standard/assault launchers can completly nullify the DPS from a battleship or T2 frigates.
